Loaded Avocado Toast
This is a great way to get a good amount of healthy fat and veggies first thing in the morning. Plus, it is so filling!
Ingredients
2 slices sourdough toast
1 large avocado
1 tsp lime juice
1/2 cup tomatoes, sliced or diced
Hard-boiled egg
Handful of arugula
Thinly sliced chives
Salt and pepper to taste
Red pepper flakes (optional)
Directions
Toast your bread to your liking.
Top your toast with sliced avocado and lightly mash it with a fork so that it is packed tight.
Top avocado with salt and pepper to taste, red pepper flakes (optional), and a squeeze of lime juice (about 1 teaspoon).
Add arugula, sliced tomatoes, hard-boiled egg, and chives. Enjoy!
