Loaded Avocado Toast

This is a great way to get a good amount of healthy fat and veggies first thing in the morning. Plus, it is so filling!

Ingredients

  • 2 slices sourdough toast

  • 1 large avocado

  • 1 tsp lime juice

  • 1/2 cup tomatoes, sliced or diced

  • Hard-boiled egg

  • Handful of arugula

  • Thinly sliced chives

  • Salt and pepper to taste

  • Red pepper flakes (optional)

Directions

  1. Toast your bread to your liking.

  2. Top your toast with sliced avocado and lightly mash it with a fork so that it is packed tight.

  3. Top avocado with salt and pepper to taste, red pepper flakes (optional), and a squeeze of lime juice (about 1 teaspoon).

  4. Add arugula, sliced tomatoes, hard-boiled egg, and chives. Enjoy!
